Edible Sculpting!   It's All About The Cake!

Years ago I started dabbling in Chocolate sculpting as I didn't much like the taste of fondant and often you threw away anything made with it.  I love the taste of sculpted chocolate as it taste much like a tootsie roll and who doesn't love a tootsie roll.  I wanted to be the next cake boss lol!!  That show is really addicting to watch.  I only made cakes for close family and friends as working in the cake business can be very stressful.  If you drop the cake you have no back up..  The baby shower cake pictured below took me 2 weeks to sculpt off and on and you have to keep the chocolate at a cool room temp to keep.  I put all the chocolate pieces in my husbands shop in containers as it was cool.  Well, his heater malfunctioned and ran all night.  I knew the moment I opened the door, yup all the chocolate had melted and I had to start all over again with a deadline for the baby shower fast approaching.  That was when I decided this is not a business I want to do full-time and only as a hobby. lol!!!  It's very costly to make a homemade cake and time consuming, so next time you buy a specialty cake let the person making it how much you value their time for making it special as a lot of heart and soul goes into it.  I have included two recipes at the end of the blog post for you to enjoy.  Thanks for stopping by blessings! I taught a Chocolate sculpting class here at OldeMoonlane a few years ago and we made this owl.  That was a really fun class and maybe I should plan another.

OK not sculpted chocolate but it Chocolate Ganache and it was out of this world yummy!

Wedding cake I made for a friends whose son was getting married.  It was hot that day and we had to keep the cake inside as yes its sculpted chocolate.

Recipes:

Modeling Chocolate-  ​  1lb. or 16 oz. chocolate (you can buy the little wafers)
                                        2/3 C light Corn Syrup

                                        If making white:
                                        1 lb. or 16 oz. white chocolate
                                        1/2 C. light corn syrup

In a double boiler (don't overheat chocolate) melt chocolate.  Place corn syrup in the microwave just to make it warm (this prevents melted chocolate from seizing when you add it)  add to chocolateand mix.  I place it in freezer bag and place in refrigerator over night before working with it.  You can freeze if you triple wrap it in plastic. and it will freeze indefinitely.  I buy cake food coloring to add colors.       Enjoy and let me know if you tried.

Chocolate Ganache-   1 C. Heavy Cream
                                                   9 oz. Semisweet Chocolate
                                                   1 T Light Corn Syrup

Put cream over medium heat until it just  starts to simmer.  Remove from heat and add the chocolate.  Stir well and add corn syrup.  Slightly cool and pour over cake.
​If you want to make it in a ganache filling instead Beat with a mixer for 5 minutes until light and fluffy.  Enjoy!

Your work is amazing. I am finding it funny how our lives have paralleled. I use to do cake decorating and make wedding cakes. I wanted to have a bakery when I was younger. I never did the chocolate sculpting and think this would be fun. If you ever decide to do a class I am in. You are blessed with many gifts.

They are gorgeous. The animals are adorable, each and every one. I cannot imagine all the time it took to do all those cupcakes. Who would want to eat them? They are a work of art.

Wendy, all the critters are chocolate. Do you use colored wafers or paint. Amazing. I wouldn't be able to eat 'em.

Hi Lois the white wafers work great and then I like using cake coloring to color my chocolate as I am kneading it. I feel a video on this could be in order sometime!

Yes I dabbled in it just for friends and family as too stressful . Oh you have got to try the chocolate and once you do you won't want to use fondant again. You can make your pieces up a week or two in advance and store them in containers.
